I finally knew what to do with the tarragon in my garden after I tried this soda at a Georgian restaurant.
Next to walnuts, it’s one of the country’s signature flavors. The soda is very refreshing and the syrup works great in cocktails as well. I even heard of people adding a drop to their black coffee.
Mix a simple syrup (one part hot water, one part sugar) and seep the tarragon twigs in it for a while, then strain. The tarragon leaves a very subtle green color. The soda I tried was bright green but that’s because they add dye, which you can do as well.
